I have learned a lot about Gluten Free cooking through doing my 20% Project on it. I have learned that there are many different types of flour that can be used in Gluten Free cooking and that some work better for certain projects than others. I found that flour such as Coconut flour is good for deserts because of its natural sweetness. For coconut flour I did find out that you need to add more liquid when you are cooking with it otherwise it will end up too dry when you make the final recipe. I also found out that the best thing to use when making pasta is to use brown rice flour, tapioca flour, and xantan gum. These combined more or less are similar to having gluten pasta. This makes it so that the flour is not as gritty and makes it so that the flour still manipulates more or less like gluten flour. When I was working with the gluten flour I noticed that it fell apart really easily which made it substantially harder to work with. I found that I could not use the lower settings on my pasta maker since the pasta was just falling apart. I used the Fettuccine setting as was recommended though and it seemed to work very well. I found out that gluten free is meant to prevent people's response to gluten when they have celiac's disease. Gluten free can be beneficial as long as they are careful about what they eat and not replacing the gluten with only things such as potato starch. I also learned that the Pesto was easy to make and delicious. In the future though I need to grow my own basil so it is not as expensive and I need to use less cream in the creamy Pesto Sauce.
I cooked the Pesto Sauce and it turned out well. It just needed a little less Cream.

Quote: “All systems of play are, at base, learning systems. They are ways of engaging in complicated negotiations of meaning, interaction, and competition, not only for entertainment, but also for creating meaning". (97) If we make our classes a system of play then we can greatly improve our classes. We can use them to engage students and to challenge them in ways they may not expect. Question: What are things to keep in mind while making your class a style of play class? What do we need to keep in mind so that all students engage and enjoy? Connection: We have always talked about making classes in a way that students will enjoy and engage by making it into a game. I have seen a TED talk where a teacher got his third grade students to do a world government game where students enjoyed it and learned a lot. Epiphany/Aha: I can make my classroom into a game by having it survival themed and have the math learning be based upon different challenges that students will experience and have to overcome through using math. Chapter 8: Quote: "the way young people participate with new media: hanging out, messing around, and geeking out...these three practices could frame a progression of learning that is endemic to digital networks". (100) This progressions demonstrates that people work from experiencing media, then doing some participation, and finally becoming an active member of the media environment. Question: What are the best supports we can give to our students so that they can progress to the final stage smoothly? Connection: We have been progressing through these steps gradually as a class. Epiphany/Aha: This is why the badges are titled what they are and why the class is structured the way it is. Chapter 9: Quote: "As we watch the world move to a state of near-constant change and flux, we believe that connecting play and imagination may be the single most important step in unleashing the new culture of learning”. (117, 118) It is very important that this is kept in mind, that we are going through a time of change and that we need to make sure that we are always connecting play and imagination to ensure that our students are learning as much as we can get them too. Question: How can we foster imagination in our classrooms when there are so many content standards that we need to meet? Connection: There are so many new technologies coming out constantly that we are in an ever changing world, as we have talked about we need to ensure that we are choosing the correct types to foster students' imagination and play. Epiphany/Aha: Our learning networks allow us to make connections and talk with other educators to filter out the best technologies that will work. These are my original posts and questions
I would like to learn how to cook gluten free products such as: pasta, tortillas, and pizza. I would like to know what is required to do the substitutions for the cooking. Do I need to know anything about the possible substitutions that I could use? What are the advantages of going gluten free for dietary reasons? What are things that can be done to increase the flavor of the gluten free products? Why is gluten bad for us? What should be avoided when trying to cook gluten free? I have learned that some substitutions work better for certain recipes than others. For instance coconut flour is generally better for deserts because of its sweetness. The brown rice flour combined with the tapioca flour and the xanthan gum created a flour that works very similarly to wheat flour. This combination also make it so that the pasta tastes similar to gluten flour. The advantages are that if you do it correctly you will generally avoid foods that are healthier for you. I needed to avoid using certain types of flour and make the proper adjustments. Gluten is bad for those with celiac disease. Chapter 1
Quote: "the new culture of learning is intricately woven into the fabric of our society; indeed, it permeates nearly everything we do"(20) I chose this because the first chapter really talks about how the new culture of learning has become so prevalent and that we as teachers need to work to adjust to a culture that is likely extremely different from the culture of learning that we experienced and that we are used to. Question: What are some of the best things that we can do to adapt to the new culture of learning? Connection: That as was talked about, students are no longer going to be going to books as references and will now be going to thinks such as Google to find their information which will mean that they will be fairly unwilling to read large amounts of text. Epiphany/Aha: I can try to get my students to see my class as a game and give them the structure to utilize the students around them as a learning community. Chapter 2 Quote: “Many traditional venues for teaching….have been predicted on what we would describe as a mechanistic approach: Learning is treated as a series of steps to be mastered, as if students were being taught how to operate a machine or even, in some cases, as if the students themselves were machines being programmed to accomplish tasks.” (35) This really introduces the idea of the past views on how teaching and learning was addressed, the chapter goes on to help define the new culture of learning. Question: How can we make the new culture of learning more widespread and make sure that we can get rid of the traditional view? Connection: This is similar to what we have talked about in the past and how the traditional view of education has been based upon the inception of the learning style during the industrial revolution. Epiphany/Aha: I need to ensure that I am working to stop myself from just "programming" my students and make sure that I am working to make them innovators. Chapter 3 Quote: “Information technology has become a participatory medium, giving rise to an environment that is constantly being changed and reshaped by the participation itself.” (42) The chapter talks a lot about how the new culture of learning is shaped a great deal by those who become citizens of the internet and the new learning generation. Question: Are you a citizen or a visitor of the internet? Connection: This is a very big idea that has been stressed in the Technology class; that we become citizens of the internet, helping to affect change, rather than just visiting the internet from time to time. Epiphany/Aha: I need to teach my students to become citizens of the internet and of my own class so that they can affect change in their learning environments. |
