I would like to learn how to cook gluten free products such as: pasta, tortillas, and pizza. I would like to know what is required to do the substitutions for the cooking. Do I need to know anything about the possible substitutions that I could use? What are the advantages of going gluten free for dietary reasons? What are things that can be done to increase the flavor of the gluten free products? Why is gluten bad for us? What should be avoided when trying to cook gluten free?
I have learned that some substitutions work better for certain recipes than others. For instance coconut flour is generally better for deserts because of its sweetness. The brown rice flour combined with the tapioca flour and the xanthan gum created a flour that works very similarly to wheat flour. This combination also make it so that the pasta tastes similar to gluten flour. The advantages are that if you do it correctly you will generally avoid foods that are healthier for you. I needed to avoid using certain types of flour and make the proper adjustments. Gluten is bad for those with celiac disease.
